The new year brings the opportunity to add new energy and refreshed focus to our lives. This January we’re feeling inspired — inspired to slow down, take stock, and create a vibe that gives way to a healthy year for the mind, body, and soul. Here are five ways we are keeping it real, healthy, and connected in 2023 at Prudential Center.
Real-food eating and food sustainability are two movements we’re embracing this year. Not only are they better for our overall health, but also for the earth and the food and nutrition security of future generations. Two of our favorite options: Clover and DIG.
Clover Food Lab, founded by MIT alum and environmentalist Ayr Muir, sources an unprecedented amount of its menu from local farmers. The local chain has paved the way for the explosion in plant-based dining options in Boston and beyond. Today, we’re grabbing a coffee from Ipswich-based roaster Little Wolf and a breakfast sandwich made with a Maine Family Farm egg, Longwind Farm organic tomatoes, and aged Grafton cheddar served on house-made pita baked with New England-grown and milled grains.
DIG offers healthy fast-casual bowls, vegetables, and comfort food with mindful sourcing as the top priority. The recipe development process always involves a conversation between the chef and small-scale grower about what they really want to cook and harvest, with a deep respect for ingredients. The result? Healthy, nourishing, delicious meals. One of our favorite lunches is the Kale Caesar Salad, featuring farm greens with mint, tomatoes, cucumbers, and avocado, topped with cashew caesar dressing and toasted breadcrumbs.
